Healthy Fruit Salad | Easy Summer Recipe
Nothing says first day of summer like a fresh, healthy fruit salad. To me, summer days are all about lounging around, soaking up the sun (when there’s a pool or beach nearby preferably), and chowing down on some fresh fruits and veggies. Today, to celebrate the first day of summer, I’m combining a few of my favorite summer things and sharing my easy summer recipe for healthy fruit salad.

I came up with this recipe for several reasons. 1) I had strawberries and bananas that were on the verge of going bad and I thought this would be a great way to use them up fast. 2) I have a killer sweet tooth and while I have been trying to lose weight for the wedding, I still needed to keep something sweet (yet healthy) on hand at all times and this fit the bill. 3) It just sounded really good.

In my healthy fruit salad, I used some of my favorite fruits that I always seem to have on hand strawberries, bananas, pineapple, mandarin oranges, grapes, apples, and shredded coconut. In all honesty, I probably could have made a fruit salad out of just strawberries, bananas, and coconut and would have been good to go.

What I love about fruit salad, and any recipe like this, is that it is completely customizable! Don't like a certain fruit? Leave it out! Like one I didn't use? Throw it in! There are endless fruit combinations to make your perfect healthy fruit salad and I urge you try all of them.

I also used the 100 calorie vanilla Greek yogurt from Aldi to combine all the fruit together. If you like plain Greek yogurt better, that would be a suitable substitution as well as any other fruity Greek yogurt.

In the end, you have a delicious, creamy concoction of sweet summer fruits that is a cool treat on a hot summer day (or even an entire meal, I won't judge). Without further ado, here is my exact easy summer recipe for healthy fruit salad. If you add your own fruit combinations, don't forget to let me know what you used and how it turned out!

Ingredients:
  • 1/2 Can of Pineapple Chunks
  • 1/2 C. Grapes
  • 1/2 C. Strawberries
  • 2 Bananas
  • 1 Can of Mandarin Oranges
  • 1 Apple
  • 1/4 C. Shredded Coconut
  • 1 C. Vanilla Greek Yogurt
Steps:
  1. Start by cutting the bananas and apples into chunks. Coat them with lemon juice to keep them from oxidizing and let them sit until the rest of the fruit is ready.
  2. Then slice the grapes, strawberries, and mandarin oranges in half to make more bite-sized chunks. (The pineapple is probably the only fruit that doesn't need chopping if you use chunks).
  3. Throw all of the fruit into a bowl one layer at a time and sprinkle the shredded coconut on top. In all honesty, you don't have to go one layer at a time, but if you are making it for an event, you may want to wait to mix in the Greek yogurt and having it neat, pretty layers would be super cute to display.
  4. Add the vanilla Greek yogurt and stir until all fruit is coated in yogurt. Store in refrigerator.
